Vegan Thai Green Curry Recipe

As the name suggests, this recipe is a healthier and an all vegan take on the traditional Thai Green Curry. It uses a special vegan mixture which allows us to enjoy the oriental flavours of the regular curry while also ensuring that the curry remains vegan and hence healthier than its regular counterpart. It has all the veggies that you find in a delicious restaurant version of the same curry, and you can make and enjoy this dish right from the comfort of your home by following the steps mentioned below.

Ingredients:

  • Oil
  • Bell Peppers
  • Peeled onion
  • 2 Green chillies
  • 1 Tomato
  • Good Dotโ€™s Thai Green Curry Mix

Instructions:

  • Dice the following vegetables finely
    • Onions
    • Tomatoes
    • Chillies
    • Bell Peppers
  • Fry onions in the pan till they start turning golden brown
  • Then add the tomatoes, chilies and bell peppers
  • Let the veggies cook for a few minutes
  • Once theyโ€™re cooked, Add a packet of Good Dotโ€™s Thai Curry mix to the pan
  • Stir the curry for a bit and mix it well
  • Then cover it let it cook some more
  • Once cooked, taste it and add any additional spices if needed
  • Top of the curry with a few coriander leaves
  • Let it cook for a few more minutes
  • Finally, your Vegan Thai curry is ready,
  • Enjoy it with some aromatic basmati rice.
